A MEMORIAL

DECLARING JANUARY 26, 2016 "SOUTHWEST CHEESE DAY" IN THE SENATE.

     WHEREAS, the city of Clovis and Clovis industrial development recruited Southwest Cheese in 2004; and

     WHEREAS, the Southwest Cheese plant opened in October 2005 using approximately two hundred million dollars ($200,000,000) of industrial revenue bonds issued by the city of Clovis; and

     WHEREAS, the Southwest Cheese plant opened with approximately two hundred five employees in 2005; and

     WHEREAS, in 2010, the Southwest Cheese plant underwent a one-hundred-million-dollar ($100,000,000) expansion, using industrial revenue bonds issued by the city of Clovis; and

     WHEREAS, the 2010 expansion increased employment to approximately three hundred eighty employees; and

     WHEREAS, the 2010 expansion increased annual output to more than four hundred twenty million pounds of cheese and more than twenty-nine million pounds of whey protein powder; and

     WHEREAS, the second expansion, using approximately one hundred sixty million dollars ($160,000,000) of industrial revenue bonds issued by the city of Clovis, is scheduled to begin in April 2016; and

     WHEREAS, the second expansion will add approximately one hundred ten thousand square feet to the plant and will result in Southwest Cheese becoming the world's largest cheese plant; and

     WHEREAS, this expansion will accommodate an additional three million pounds of milk per day and increase milk input to approximately eleven million pounds daily and add an additional forty-eight employees and bring total employment to approximately four hundred twenty-eight employees;

     NOW, THEREFORE, BE IT RESOLVED BY THE SENATE OF THE STATE OF NEW MEXICO that January 26, 2016 be declared "Southwest Cheese Day" in the senate; and

     BE IT FURTHER RESOLVED that a copy of this memorial be transmitted to the president of Southwest Cheese.
